Heritage Pastured Berkshire Pork
Our pork is from heritage Berkshire pigs, which has long been prized by chefs for its flavor. It is a relatively lean pork with rich flavor, texture and color that is unlike any other pork on the market. Our pigs live their entire life on pasture foraging, digging and wandering. They are fed a non-GMO locally sourced grain that is tested regularly to ensure it is glyphosate-free as well as pesticide and herbicide free. We also supplement their diet with whey from our dairy cow and vegetables from our organic garden. Our bacon is naturally cured without the use of artificial nitrates or nitrites.

Our Heritage Berkshire Pork Package is an opportunity to stock up on our amazing pork at a better value than buying it separately. It includes approximately 15-17 lbs of pork:
6-7 lbs Sausage (a mix of Classic, Sage Breakfast, Sweet Italian, Mild Italian)
1 lb Ground Pork
6 Pork Chops
1 Boston Butt or Picnic Roast
1 Package of Bacon
We are happy to deliver to Falls Church City, Hillsboro, Purcellville and Round Hill. We will also deliver to other locations within this radius if 5+ orders are consolidated to one location. Contact us to discuss this option.

Pork Loin Chops - Boneless - $10/lb
Boneless Pork Loin Roast - $9/lb
The Pork Loin Roast is the section from which the pork chops are cut. This is a fairly lean cut and most recipes recommend cooking at a high heat for a relatively short period of time.
This the most economical, flavorful, tender, and versatile cut of pork and is fairly lean. It is cooked low and slow and has become a favorite of ours to prepare and is excellent for feeding a crowd. It makes the most amazing pulled pork, carnitas, fajitas, etc.
The Picnic Roast and Boston Butt Roast are both cut from the shoulder and can be used interchangeably. It is another cut best cooked low and slow and is also flavorful, tender, and versatile.
Our ground pork is lean and excellent mixed with ground beef or used alone.
Bacon - $12/lb
This is an all-natural uncured bacon, which means it is cured using natural ingredients such as celery and sea salt. It does not contain any artificial nitrites or nitrates.
Due to COVID-19 and the strain put on our local processors, our butcher, T&E Meats, is not currently able to make link sausages. For now all sausages are sold in bulk packages. We opted to not offer any Bratwurst in light of not being able to make it into griller links.

Sausage - Smoked Kielbasa - $8/lb
This is a polish style smoked sausage that is great grilled or quickly pan cooked or added to a variety of dishes. This was from our last processing prior to COVID and is available as griller links.
